So how many times are we allowed to say "omg, this week was so. freakin. crazy." before it becomes borderline annoying? Or just plain ole regular kind of annoying. Seriously though, even if there was a number limit, I probably would have maxed out on it by now. Luckily for all of us, erm... two of us, I still cook even when I'm frantic. At least most of the time. And definitely last night.
Pumpkin Alfredo (serves 2)
1/2 lb (1/2 package) of linguini noodles
2Tbs olive oil
2 heaping Tbs pumpkin
salt&pep to taste
Cook noodles to al dente and drain
1. start by heating your oil, and then adding your flour, whisking smooth
2. s-l-o-w-l-y add milk, whisking the entire time
3. bring back to a low boil, whisk in pumpkin
4. add spices and salt and pepper to taste
5. toss with pasta
6. serve and enjoy!
